Pistachio, mascarpone and white chocolate Tiramisu

Ingredients for

- 250 g Mascarpone
- 2 egg yolks
- 50 g pistachios
- 30 g pistachio grain
- 80 g sugar
- 50 g white chocolate
- 8 sponge fingers
- 100 ml cold coffee
Put the pistachios in the mixer and blend until they are reduced to flour.
Whisk the egg yolks, add the sugar and continue to whisk until fluffy.
Add the Mascarpone and continue to whisk.
Add the pistachio flour and continue to whisk until obtaining a smooth and soft cream.
Cut the sponge fingers in half and place 2 pieces on the bottom of each glass, moisten with a teaspoon of coffee and cover with the pistachio and mascarpone cream.
