Couscous with golden grapes, pumpkin, primo sale cheese, and baby spinach

200 g couscous


150 g of cooked chickpeas


200 g of peeled pumpkin


30 g of Golden grapes


200 g of Primo Sale cheese


100 g of baby spinach


150 g of pumpkin


1 red onion


Extra virgin olive oil

  1. Soak the golden grapes in a bowl of cold water.
  2. Slice the onion and sauté it in a pan with a drizzle of extra-virgin olive oil.
  3. Add the pumpkin, cut into chunks, and cook until the pumpkin is tender, adding a little water if necessary.
  4. Once cooked, add the chickpeas, season with salt and pepper, and sauté for a few minutes.
  5. Prepare the couscous according to the instructions. When it’s ready, add the penne pasta cut into small pieces, the squeezed golden grapes, the pumpkin, and the chickpeas, stirring well.
  6. Serve the couscous with fresh baby spinach and a drizzle of extra-virgin olive oil.
