Soft coconut cookies (egg white and chocolate)

- 150 g coconut flour
- 120 g sugar
- 3 whites
- 100 g dark chocolate
- Pour the coconut flour into a bowl, add the sugar and egg whites and mix well until smooth and homogeneous.
- Fill an icing bag with the mixture and make lots of little balls/cookies on a baking tray lined with greaseproof paper.
- Bake in a pre-heated, ventilated oven at 200°C for 10-15 minutes until golden brown.
- Remove from the oven and leave to cool.
- Melt the chocolate in a double boiler, dip the biscuits in half and allow to cool to room temperature before serving.
